Experience Artful Global Dining at Collage of St. Augustine
When dining at Collage, be prepared for a first-class, award-winning experience.
The menu reflects the eclectic tastes of owners Mike Hyatt and Cindy Stangby and focuses on fresh local seafood, steaks, lamb, chicken, veal and pastas using international flavor profiles. Add to that an extensive wine list with bottles perfectly suited for Collage’s dishes and sure to please every palate.
The kitchen staff, under the watchful eye of Chef Matt Brown, prepares dishes from scratch daily using the finest and freshest ingredients available. As much as possible, Collage uses fish from local waters and produce from nearby farms. While Collage isn’t afraid to try something new, most of the restaurant’s dishes are original recipes that have been refined over the years.
Veteran restaurateurs, Mike and Cindy moved to St. Augustine several years ago to enjoy all the nation’s oldest city has to offer. They brought with them a desire to open a first-class dining establishment that reflected their eclectic personalities and tastes.
Five years later, Collage continues to provide guests with a warm, inviting atmosphere and exceptional food. The made-from-scratch, locally-sourced dishes presented with a bit of flair are served by a wait staff that provides impeccable service and ensures every guest has a memorable dining experience.
In fact, the restaurant has made such an impression that guests are raving. OpenTable, a company that specializes in reservations, recently compiled more than 5 million restaurant reviews from users who visited more than 20,000 restaurants and named Collage one of the 100 best in the nation. Collage was one of just three Florida restaurants to make the list.
Enjoy dinner at Collage located in the heart of the historic district, just a block off of St. George. You can also visit Collage at Made in St. Augustine as they join forces with Rype & Readi and Urban Asado to provide attendees a truly unique culinary experience.
